Chayote!

Our chayotes are doing well! They are like a cross between a melon and cucumber in texture and a bit like courgette but a tiny bit peppery in taste (ie don’t have much of an identifiable taste but a crisp texture).

We’ve had them so far sauteed or stirfried and also in our ‘Galician Salad’ which is the chayote version of Greek salad! We used the chayote instead of cucumber and soft goat’s cheese instead of feta.
